RECIPE: Infused Asian Noodle Salad

When people think of infusing cannabis into foods, they often think of recipes associated with baked goods, that are heavy in sugar and calories, or find there are certain ingredients that don't always fit into their dietary regimen. Additionally, the idea of infusing butters and oils can be a daunting task. Never fear, infusing food can be very simple and can be incorporated into health conscious recipes with little to no cooking or prep work required.

One of the easiest and most convenient products to infuse recipes is using cannabis oils, which are readily available on the cannabis store shelf. Cannabis oils are composed of cannabis plant compounds but also a "carrier oil", which aids in its absorption into your body. The most commonly used carrier oil used in cannabis oils available is called Medium-chain triglycerides or MCT, for short. MCT oil is typically a coconut or palm based oil, which is a versatile ingredient for many cannabis infused recipes.  

One of the most simple cannabis oil infusions to use in recipes is an oil based salad dressing. When infusing an oil based salad dressing, you will need to substitute out some of the oil that the recipe calls for with cannabis oil. This means you will need to measure out the appropriate amount of cannabis oil before you add the remaining oil that the recipe calls for. It will require a little math to determine the desired potency per serving. It should also be noted that cannabis oils available have varying ratios of THC to CBD. Speak to a budtender to determine which cannabis oil ratio works best for you.    

 

Infused Gluten Free Asian Inspired Noodle Salad 

Serves 4 people

Ingredients:

  • 2 cubes of boiled and chilled rice vermecielli noodles

  • 1 cup chopped cabbage

  • 1 cup of peeled and chopped cucumber

  • 1 cup shredded carrot

  • 1/2 cup diced green onion

  • 1 sliced jalapeno pepper

  • 1/4 cup chopped cilantro

  • 1/4 cup chopped mint

  • 1 cup peeled and cooked shrimp

  • 1/2 cup of peanuts 

    Dressing:

  • 1/2 cup peanut butter

  • 1 1/2 Tbsp freshly grated ginger

  • 1 Tbsp minced garlic 

  • 2 Tbsp lime juice

  • 3 tbsp rice wine vinegar

  • 2 tbsp soy sauce

  • 1/2 Tbsp sirracha

  • 3 tbsp honey

  • 1 1/2 Tbsp Sesame Oil 

Instructions:
Combine peanut butter, ginger, garlic, lime juice, rice wine vinegar, soy sauce, sirracha and honey in a blender. When preparing the sesame oil, add in your cannabis oil into your measuring spoon according to desired potency, topping the remaining amount with sesame oil. Add this to your blender and set to emulsify. In a large bowl, add the dressing to the salad base and toss evenly.
